Today I’m inspired so here’s a recipe and a story 😄
Ever since I was little I wanted to have a waffle maker. The idea of making those delicious waffles at home at any time was spectacular.
After many years and now living in my own place, I decided to buy the fabulous machine! 😄 While tapping my back and happy with the purchase, I spent a reasonable amount of time looking for easy recipes that didn’t require a ton of ingredients. Let’s face it, I probably won’t buy special ingredients that I don’t have or fancy expensive ingredients. So I proceeded to adapt two recipes I found online on short videos from YouTube.
I can tell you not to make the same mistake as I did. Terrible idea. It didn’t cook and it exploded inside the machine. It took me a while to clean the waffle maker. And I stopped trying to make decent waffles for some time.
Until I finally dared to try again, knowing that if it failed the mess would be enormous again and I would have to clean it… again. This time, I went with the safe choice — I recreated a recipe from Made by Choices. I’ve been following her since I became vegan and I highly recommend her recipes! Here’s my adaptation:
Waffles
Ingredients:
200g (2 cups) whole spelt flour
250ml (1 1/4 cups) plant-based milk - I used soy-based
3 tbsp olive oil
2 tsp baking powder
3 tbsp sweetener (I have used different homemade jams, orange juice and sugar, apple sauce and cinnamon)
How to make it:
Preheat the waffle maker.
(I did not know how to use a waffle maker and I messed it up the first time. You need to plug that in and then you hear the machine working. When it stops heating it means it’s ready to cook. That’s when you add the batter in. After a few minutes, it starts working again and the cycle repeats itself.)
Combine the spelt flour, baking powder, plant-based milk, olive oil, and your sweetener in a bowl. It shouldn’t be too runny and not too thick. Add more flour or more plant-based milk to get the perfect consistency, which also depends on the type of sweetener you used.
Stir well with a wooden spoon until the batter is smooth and lump-free.
Fill a ladle with the batter and pour a portion onto the waffle maker. I prefer not to cover everything with the batter since it might be too much, and then you get a mess to clean.
Let it cook for a few minutes, depending on the power of your machine. The machine should stop working on its own.
In my home, we like to serve it with almond butter on top, vegan yogurt or with apple sauce and sugar heated on the stove.
